Cooking Tips to complete a meal quickly or make cooking generally easier:
Week Long Recipes. The simplest possible way to please even the left-over snob in the family. Check out the week long recipes link in the recipes area for 5 ways to create a new dish every day of the week from chicken cooked in a crockpot. With less than 10 minutes of prep each day, it's as simple for you as it is delicious for them. Coming soon is a week of beef recipes. Check back often!
Fresh Veggies: Less dramatic but the staple of most meals – and, seriously, much more heart healthy than the scrumptious casseroles that we try to eat only a few times a year. Come on, buy the more difficult ones but supplement with the fresh and simple. Green beans and asparagus are especially simple. Easiest preparation method – steam them in the microwave for about 5 minutes OR UNTIL YOU START TO SMELL THEM. That means they’re done. For a little extra punch, drizzle some flavored oil and some sautéed nuts on them
Corn Bread: Buy a box mix at the grocery store. It’s easy and yummy.
Macaroni and Cheese: Stouffers or other frozen options. Kids love them all and if you want to make them a little better for adults, add a splash of milk or broil at the end to brown the edges. My kids are also huge fans of Velveeta shell noodles and cheese.
Mashed Potatoes: Buy them pre-made in the refrigerated section of the grocery. There are several different flavors and all are pretty darned good. A great option when only a couple diners are eating carbs that day.
Rice: I absolutely, positively think the 90 second (microwave right in the bag) Uncle Ben’s flavored rices are the best thing that has happened to family culinary harmony in at least a decade. For a big rice eater, these packets only serve about two but that is often enough for these divided families where half prefer to be low-carb and the others don’t want to suffer with them. Their flavors are all excellent depending on what you’re serving with. If your store doesn’t have them, the 5 minute boil-in-a-bag options are pretty darned easy too.
Great Appetizer: few know about it but most of your guests will love it: heats of palm. Canned. Pick some up at the grocery store and put it on your vegi tray with carrots olives, and other regional faves.
Sides too dry? : add a small amount of cream of (whatever) soup until desired consistency is reached.
